Coco Berry Bash Smoothie

Admittedly, I can't take credit for this smoothie's name... Between sips my second graders suggested the most creative titles for this smoothie that they could, and this was the winner!

Getting children involved in the kitchen at an early age cultivates a healthy connection with food and provides educational opportunities for them to prepare God's healthy foods. This is how I got my start as well; my mom invited me in the kitchen early on and gave me some guidelines, recipes and responsibilities. Since then, I have added a few dashes of creativity, stirred in some veggie spontaneity, and served many a meal. Have fun with unique veggies and spices, and let your children experience the satisfaction of contributing to your meals.

...Back to the smoothie, though...

This smoothie is a great snack, pick me-up or flavorful drink for kids with natural sugars, antioxidants and the balancing action of chia seeds, coconut milk and cinnamon. Invite your kiddos to come and give it a whirl!

Coco Berry Bash Smoothie

serves 2-4

  • 1 can full fat coconut milk*

  • 2 cups frozen organic mixed berries

  • organic spinach (as much as you can sneak in)

  • 1-2 Tablespoons shredded organic beet (adds color & minerals)

  • 1 teaspoon cinnamon

  • 1 Tablespoon organic chia seeds

Directions:

Simply add in all the ingredients and blend until smooth. Enjoy!

* You could do 1/2 water or other unsweetened milk, but the smoothie may not be as creamy.

Also, you can experiment with using frozen wild blueberries and walnuts instead of mixed berries and chia seeds.
