Summer Zuke & Cuke Spiral Salad

Summer is synonymous with the overflow of squashes-- if you have a garden, you may have more zucchini than you know what to do with! At my farmer's market I have bought a few boxes of squash lately, and I want to share with you a fun way to enjoy it-- SPIRALIZING it!

Summer Zuke & Cuke Spiral Salad

(use as much organic as possible):

Serves 2-4

6-7 inch cucumber, spiralized (appx. 2 1/2 cups)

5-6 inch zucchini, spiralized (appx. 2 1/2 cups)

1 medium organic carrot, peeled into "ribbons" with a vegetable peeler

2 teaspoons walnut oil

1/8 to 1/4 teaspoon REAL® Salt

1/2 teaspoon fresh dill, optional

1/4 cup walnuts, chopped

Directions:

1. Simply spiralize the cucumber and zucchini, and chop the spirals every 5-6 inches for easier eating. Place them in a large glass bowl. Peel the carrot and add it into the bowl as well. Toss the veggies together.

2. Pour the walnut oil over the veggies and toss to coat. Season with salt and dill to taste and lightly toss.

3. Sprinkle the walnuts on each plate as you serve it.

*A spiralizer is similar to the concept of an apple peeler, but it can be used to make spirals or "pasta" out of vegetables. Many stores and Amazon carry spiralizers.
