Time for a snack or mid-morning much? Protein is a perfect way to satisfy hunger and provide steady fuel for the body's needs. Here is a delicious, fun energy ball recipe that features protein! Enjoy!
Energy Balls- Goji Berry
Makes 1 ½ - 2 dozen
3 Tablespoons almond butter
3 Tablespoons Goji berries, dried
2 Tablespoons beet powder
2 Tablespoons unsweetened canned pumpkin puree
½ teaspoon Nature’s Sunshine® Stixated powdered drink mix
1 scoop Love and Peas® protein powder (Sugar Free)
1) Place the almond butter, Goji berries, beet powder, pumpkin, Stixated® and protein powder in a food processor and process until a soft, moldable dough is formed. You may need to scrape down the sides in between processing.
2) Pinch off a small amount of dough and roll between your hands to make large gumball size balls.
3) These are good without a coating, but if you would like to coat them with something that is optional. If coating, place a few of them in a sandwich baggie and shake to coat with your favorite coating:
Finely chopped nuts
4) Store in the refrigerator or freezer.
