Easy Chocolate Pudding

Isn't it a blessing that desserts can be made healthy?!

My hope is that this will be a helpful "go-to" recipe when you and your family are craving something sweet but not wanting to get off track with your health. All you need are a few simple ingredients and a food processor, and dessert will be on the table!

Chocolate Pudding

2-4 servings

1 ½ cups avocado, sliced

2 Tablespoons raw honey (or grade B Maple syrup)

1 Tablespoon carob powder

1 Tablespoon unsweetened almond milk OR coconut milk

1 ounce 70% or higher dark chocolate, melted

¼ teaspoon stevia

½ teaspoon organic pure vanilla extract

Directions:

1) In a food processor combine the avocado, raw honey, carob powder, milk, melted chocolate, stevia and vanilla. Process until smooth and creamy. Scrape down the sides of the bowl if necessary, and process until smooth. Chill in the refrigerator until ready to serve or enjoy immediately.

Note: This recipe easily doubles if you are cooking for a crowd!

A unique and delicious way to serve this pudding: Spiralize a sweet potato, dust the noodles with cinnamon, plate 1 cup of noodles for each serving then place ¼ cup of chocolate pudding in the center of the noodles. Sprinkle with chopped almonds. Enjoy!
