Summer Sunset Salad

Bright colors, fresh flavors, beautiful sunsets... oh the many blessings that summer brings! 

Along with Farmer's Market fare, recently I have been savoring the delicious varieties of olive oils and vinegars from Heavenly Olive Oils, a local specialty olive oil and vinegar store.

 

This recipe features their Blood Orange olive oil and Pomegranate Quince vinegar with ripe summer peaches and a splash of citrus! I hope you absolutely love it! 

 

 

 

Summer Sunset Salad

 

½ cup fresh orange juice

¼ cup fresh peach, chopped (or frozen peach)

¼ cup Pomegranate Quince balsamic vinegar

¼ cup Blood Orange olive oil 

⅛ teaspoon fresh ginger, grated or minced 

1 teaspoon chia seeds

 

Salad:

Organic mixed greens 

Rainbow carrots, peeled into “ribbons”

Golden beet, peeled into “wisps” or grated 

Avocado, sliced

Fresh peach slices, optional 

 

In a mini blender puree the dressing ingredients except the chia seeds until well combined. Transfer the dressing to a mason jar and add the chia seeds and shake well. (If you don’t want the chia seeds whole, you could put them in the blender also.)

 

Assemble the salad and drizzle with the dressing. Enjoy as you savor the sights and flavors of summer!
