Kale salads, when made with lots of love... and a little elbow grease, are delicious!
In my book, massaged kale salads are a wonderful way to enjoy this hearty leafy green!
When you add in the rich flavors of sundried tomatoes and grilled artichokes, this salad really comes alive! I hope you love it!

Italian Kale Salad
8 cups organic kale, torn and de-stemmed* (about 1 medium bunch)
2 Tablespoons lemon juice
2 Tablespoons tahini (sesame seed butter)
2 teaspoons Bragg® liquid aminos
¼ cup sundried tomatoes in olive oil
⅓ -½ cup grilled artichoke hearts, drained and rinsed
¼ cup or more olives (kalamata, green, black etc.)
Black pepper, optional
Simply place your kale in a large glass bowl and massage the lemon, tahini and aminos into the kale until it is well coated and wilted to about ½ its volume.
Add in the toppings (plus any others you’d like such as cucumber, red onion or garbanzo beans), and toss together.
Plate the salad, and serve with fresh cracked pepper, if desired. Enjoy!
*You can keep the kale stem and freeze it to add to chicken stock or smoothies!
