With all the veggies this summer, a simple homemade hummus is just what the snack menu needs!
Hidden Veggie Hummus
1 cup carrot tops, chopped
2 Tablespoons rosemary flavored olive oil (or regular organic olive oil)
½ teaspoon sea salt
¼ teaspoon pepper
½ teaspoon garlic powder
1 can organic garbanzo beans, drained and rinsed
3 Tablespoons filtered water
1 Tablespoon organic tahini
¼ cup grilled artichoke hearts
Assorted seasonal veggies: kohlrabi, carrots, radishes, salad turnips, cucumber, etc.
In a food processor or blender, mince the carrot tops, olive oil, and seasonings.
Add in the rest of the ingredients and process or blend until the desired creaminess is achieved.
Arrange the hummus and veggies on the plate or tray and enjoy!
