Jeweled Kale Salad

Ruby red raspberries, amethyst hued carrots and emerald leafy kale- sounds like a treasure of a salad, right? Rich in nutrition and fresh flavors, I hope you love this new recipe!

Jeweled Kale Salad

(Serves 1-2; easily doubles)

Salad: 3 cups kale, torn 1/4 cup Red cabbage, sliced 1/2 Purple carrot/beet, peeled into “ribbons” 1/4 Red onion, sliced 1/2 cup Raspberries 2 Tablespoons Walnuts Dressing to massage kale with: 1 Tablespoon lime juice 1 teaspoon tahini 1 teaspoon lime olive oil

1 teaspoon organic miso (white/mellow miso)

3-5 drops stevia Simply massage kale with the dressing ingredients, then top with the veggies and raspberries. Chill and enjoy!
