Grateful 4 Salad

Inspiration can come in the most ordinary places... for me, the grocery store is often one of these places.

When I saw the gorgeous color of the dragon fruit in the produce cooler, God gave me this idea for a colorful salad that would feature 4 foods- dragon fruit, kiwi, pomegranate and watermelon radish! Grateful for this burst of inspiration, I couldn't wait to try it and share it with you!

Here is what you'll need to create this beautiful dish:

Grateful 4 Salad

(serves 2)

Dressing*:

1/4 cup brewed and chilled Tea forte™ “wild berry hibiscus organic tea” (or other berry or passion fruit tea)

1-2 teaspoons coconut aminos

5-10 drops liquid stevia, optional

Dash cinnamon

*This salad would even be wonderful with a flavored olive oil or walnut oil and cracked sea salt/pepper! -OR- the Orange Courtwarming Salad Dressing in Cook 2 Flourish Cookbook p.119!

Salad:

6 ounces mixed baby greens

½ cup purple cabbage, shredded

½ cup pomegranate jewel “arils”

1 kiwi, peeled and sliced

½ dragon fruit, cubed

½ avocado, sliced

¼ watermelon radish, peeled into “whisps”

¼ red or Chioggia beet, peeled into “whisps”

Sunflower sprouts or broccoli sprouts, optional

Directions:

  1. Start with a bed of mixed greens- I used purple leaf lettuce

  2. Add on shredded purple cabbage

  3. Arrange the sliced kiwi and cubed dragon fruit (if using)

  4. Sprinkle on pomegranate seeds

  5. Slice an avocado and arrange on the salad

  6. Use a vegetable peeler to create “whisps” of watermelon radish and beet

  7. Add sunflower or broccoli sprouts, if using

  8. Cracked sea salt and/or pepper

  9. Drizzle with the dressing and enjoy!
