Purple Brain Power Veggies & "Pasta"
Inspired by an acquisition to the Dallas Farmer's Market with a dear friend, I wanted to create a recipe that would feature this gorgeous purple cauliflower...
Thinking of the potential brain and nervous system health benefits of purple foods, I combined purple cabbage, red onion and purple basil to amp up the antioxidants and flavor of this dish. It is quite simple to make, and I hope that you really enjoy it!
Purple Brain Power Veggies & “Pasta”
Spaghetti squash, baked
Purple cabbage, chopped
Red onion, sliced
Purple cauliflower florets
1 teaspoon fresh rosemary, chopped
Real™ sea salt
Pepper
Garlic powder
1 Tablespoon avocado oil
Garnishes:
Chive Flowers
Purple basil leaves
1 Tablespoon chopped walnuts
Preheat the oven to 375 degrees.
In a glass baking dish toss the veggies with the oil and spices and bake for 25- 30 minutes.
Scoop out the spaghetti squash “pasta” and place the roasted veggies and desired garnishes on top.
