Rosemary Mashed Potatoes {Dairy Free}
Sometimes you just want some comfort food...
One thing I love to do when comfort food cravings strike is to recreate them in a healthy way! In these mashed potatoes, I swapped out the dairy for infused olive oil and chicken broth or unsweetened almond milk! Using Farmer’s Market fall potatoes, fresh rosemary and exceptional olive oil makes for a healthier, comforting dish!

Rosemary Mashed Potatoes
Serves 4-6
2 lbs. organic potatoes*, chopped into 1 inch chunks (with skin on)
1 large garlic clove, smashed
2 Tablespoons Heavenly olive oil (½ T. Rosemary oil, 1 ½ T. Butter oil)
⅓ cup chicken stock or unsweetened almond milk
¼ teaspoon pepper
½ teaspoon Real® sea salt
½ teaspoon fresh rosemary, to garnish
Fresh chives to garnish, optional
Directions:
Bring water to boil with a steamer basket. Meanwhile, smash the garlic and chop the potatoes.
Add the potatoes to the pot with the garlic clove on top and cover with a lid. Steam for 10-15 minutes until tender.
Transfer potatoes to a large glass bowl and mash the potatoes with the oil, chicken stock or almond milk, pepper, and sea salt. Put the garlic through a garlic press, add it to the potatoes, and mash everything together until it is as creamy as desired.
Serve immediately with rosemary and chives as the garnish or take out the water and steamer basket in the steaming pot and keep the potatoes warm in the pot.

*Potatoes are one of the "Dirty Dozen" crops on the EWG's list, so opt for organic if at all possible! Try your Farmer's Market, Aldi or health food store! I am curious to try this recipe with cauliflower or at least 1/2 cauliflower to decrease the amount of carbs!
