Easy Italian Casserole {Gluten Free}

Warm, comforting Italian food is hard to beat, isn't it?!


Many times, though, our Italian favorites can result in loads of dairy, gluten, and even hidden sugar!


With our local Farmer's Market CSA spinach, we "upgraded" an Italian classic to be nutrient rich and flavor FULL! Enjoy!





Easy Italian Casserole


1 box of cooked lentil pasta (approximately 4 cups dry) or cooked spaghetti squash

1 lb. cooked organic ground beef, venison, turkey etc.

1 cup minced onion

1 cup minced mushrooms

2 cups organic spinach, sliced

1 can black olives, sliced

1 garlic clove, minced

1 Tablespoon organic fennel seeds

1 Tablespoon organic Italian seasoning

Fresh basil, optional

1 teaspoon organic garlic powder

Real® salt, to taste

Pepper, to taste

1 jar organic, no-sugar added marinara

1 log of goat cheese, optional


Directions:

Pre-heat the oven to 350 degrees.

To the pot of cooked meat, add in the onion, garlic, and mushrooms and cook for 8-10 minutes until softened.


Next, add in the spinach and olives to quickly cook- about 2-5 minutes. Add in the spices and stir well.

Pour in the marinara and pasta (or spaghetti squash) and mix well.


Place the casserole into a glass baking dish and crumble the goat cheese on top. Bake for 10-20 minutes until the cheese is melted and the casserole is warmed through.
