Energy Balls- Chocolate Mint

Ready for another energy ball flavor? Happy snacking!

Energy Balls- Chocolate Mint

Makes 1 ½ - 2 dozen

1/3 cup almond butter

1-2 Tablespoons cocoa powder (or carob powder)

1 Tablespoon cacao nibs

1 Tablespoon raw honey OR 6-8 drops liquid stevia

1 Tablespoon unsweetened coconut flakes

2 Tablespoons Nature’s Harvest protein powder

2 Tablespoons unsweetened canned pumpkin puree

1 teaspoon Nature’s Sunshine® Liquid Chlorophyll ES

5 Nature’s Sunshine® Xylitol Peppermints

Directions:

1) Place the almond butter, cocoa powder, cacao nibs, your choice of honey or stevia, coconut, protein powder, pumpkin, chlorophyll and mints in a food processor and blend until finely ground and smooth. You may need to scrape down the sides in between processing.

2) Pinch off a small amount of dough and roll between your hands to make large gumball size balls.

3) These are good without a coating, but if you would like to coat them with something that is optional. If coating, place a few of them in a sandwich baggie and shake to coat with your favorite coating:

Cocoa powder

Coconut flakes

Chia seeds

Sesame seeds

Finely chopped nuts

4) Store in the refrigerator or freezer.
