Gluten Free Chocolate Chip Cookies
Thanksgiving and Christmas are coming, can you believe it?! Cookies and cookie jars are plentiful this time of year, so let’s make a easy, healthy version of the classic chocolate chip cookie in this video!
Here are the ingredients you will need:
1 cup almond flour 1/4 cup coconut flour (or sub more almond flour) 3/4 cup Love and Peas Sugar Free protein powder (Robin's online store) dash sea salt 1/4 teaspoon cinnamon (or to taste) 1/4 cup monk fruit sweetener or coconut sugar 1/4 teaspoon organic stevia (I used powdered) 1/2 cup dark chocolate, chopped (Lily's or Alter Eco brands are great! )
1 teaspoon almond and/or vanilla extract 8 Tablespoons grass fed/ organic butter (Kerry Gold)
Jar, if making the dry ingredients into a gift or storing for later use.
Simply mix the dry ingredients in a food processor then add in the extract and butter until a nice dough forms. Pre-heat the oven to 300 degrees.
Pinch off the dough and flatten on an unbleached parchment paper lined cookie sheet. Bake them at 300 degrees for 16 to 20 minutes. Pull them out of the oven, even if they are still soft- they will harden as they cool.
