Local Roasted Potatoes: 2 Easy Ways
Locally grown foods are such a treat, aren't they?! These 2 easy recipes feature sweet potatoes and new potatoes from my local CSA farm share! Join me in the kitchen to see how to make them!
Here's what you'll need:
Cinnamon Sweet Potatoes
4 cups cubed sweet potatoes
2 teaspoons coconut oil
1 teaspoon cinnamon
1/4 teaspoon REAL® or pink Himalayan sea salt
1/8 teaspoon black pepper, to taste
Preheat the oven to 350 degrees.
In a glass baking dish, use your hands to massage the coconut oil into the sweet potatoes.
Sprinkle on the cinnamon, salt and pepper. Toss to coat with your hands or with a spoon.
Level the sweet potatoes on the pan and bake for 30-40 minutes until tender. Enjoy!
Parsley Roasted Potatoes
2 cups potatoes, chopped
1 cup chopped onion
2 red radishes, chopped (optional)
1 teaspoon avocado oil
1-2 garlic cloves, minced or pressed
½ teaspoon REAL® or pink Himalayan salt
½ teaspoon black pepper
3 Tablespoons fresh parsley, divided
Preheat the oven to 350 degrees.
In a glass baking dish, toss the potatoes, onion and radishes with the oil.
Stir together with the garlic, salt pepper, and 2 Tablespoons of parsley.
Level the potatoes on the pan and bake for 28-30 minutes until tender. Sprinkle with the extra parsley before serving as a garnish. Enjoy!
