Sweet Swiss Chard

Sweet Swiss Chard

½ purple sweet potato, sliced

4 cups Swiss Chard, sliced and de-stemmed

½ Tablespoon butter olive oil

½ Tablespoon maple balsamic vinegar

¼ teaspoon cinnamon

Sea salt and pepper, to taste

Chopped nuts, if desired


Bring water to a boil in a pot with a steamer basket.

In a serving or mixing bowl, whisk together the oil, balsamic and cinnamon.

Steam the sweet potato until bright purple and tender- about 4-7 minutes.

Take them out and keep them warm, then add the Swiss Chard to the steam basket. It should only take 2-3 minutes. If you want to steam the colorful stems, chop them on the bias then steam them for 2 minutes before adding the Swiss Chard leaves.

Toss the Swiss Chard with the oil and balsamic mixture, then plate it and arrange the sweet potatoes on the side or on top.

Garnish with chopped nuts, if desired!
